Hearty Mediterranean Chicken Stew

Start by heating olive oil in a large pot over medium heat. Add chopped onions and sauté until they become translucent, about 5 minutes.
Stir in minced garlic and cook for an additional minute until fragrant. Add diced carrots and celery to the pot, cooking for another 5 minutes until they begin to soften.
Season the vegetables with salt, pepper, and dried oregano, stirring to combine. Next, add the chicken thighs to the pot, browning them on all sides for about 7-10 minutes.
Pour in the chicken broth and bring the mixture to a simmer. Add diced tomatoes and bay leaves, stirring to incorporate all the ingredients.
Cover the pot and let the stew simmer for 30-35 minutes, allowing the flavors to meld and the chicken to cook through.
