Start by heating a large skillet over medium heat. Add 1 tablespoon of olive oil to the skillet and let it warm for about 30 seconds.
Next, add 1 pound of ground chicken to the skillet and cook it for 5-7 minutes, breaking it apart with a spatula until it is browned and cooked through.
While the chicken is cooking, prepare the mango salsa by dicing 1 ripe mango, 1/2 red bell pepper, and 1/4 red onion into small pieces.
In a mixing bowl, combine the diced mango, bell pepper, onion, 1 tablespoon of chopped fresh cilantro, and the juice of 1 lime.
