In a small bowl, whisk together 1/4 cup of pure maple syrup, 2 tablespoons of balsamic vinegar, 1 tablespoon of Dijon mustard, and 1/2 teaspoon of garlic powder to create the glaze.
Set aside. Preheat your grill to medium-high heat, ensuring it's clean and well-oiled to prevent sticking.
Season 4 boneless, skinless chicken breasts with salt and pepper on both sides. Brush the chicken with half of the maple-balsamic glaze, making sure to coat it evenly.
Place the chicken on the grill and cook for 6-7 minutes on one side. Flip the chicken and brush the other side with the remaining glaze.
Continue grilling for another 6-7 minutes, or until the internal temperature reaches 165°F. While the chicken is grilling, prepare the rainbow veggie skewers by cutting 1 bell pepper (any color), 1 zucchini, and 1 red onion into bite-sized pieces.
Thread the veggies onto skewers, alternating colors for a vibrant presentation. Drizzle the skewers with olive oil and sprinkle with salt and pepper.
Grill the veggie skewers alongside the chicken for about 5-6 minutes, turning occasionally until they are tender and slightly charred.
Once the chicken is cooked, remove it from the grill and let it rest for 5 minutes before slicing. Serve the grilled chicken with the rainbow veggie skewers on the side, garnished with fresh parsley if desired.
