Fried Korean Zucchini
Fried Korean zucchini is a delightful dish featuring tender zucchini slices coated in a light batter and fried to golden perfection. This dish is often enjoyed as a side or snack, offering a crispy texture and savory flavor that pairs well with various dipping sauces.
Begin by washing the zucchini thoroughly under running water. Cut the zucchini into thin slices, about 1/4 inch thick.
In a mixing bowl, combine 1 cup of all-purpose flour, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
In a separate bowl, whisk together 1 large egg and 1/2 cup of cold water until well combined. Dip each zucchini slice into the egg mixture, allowing any excess to drip off.
Next, coat the zucchini slice in the flour mixture, ensuring it is evenly covered. Heat 1/2 cup of vegetable oil in a large skillet over medium heat until shimmering.
Carefully place the coated zucchini slices in the hot oil, making sure not to overcrowd the pan. Fry the zucchini for about 2-3 minutes on each side, or until they are golden brown and crispy.
Once cooked, transfer the fried zucchini to a plate lined with paper towels to drain excess oil. Serve the fried zucchini warm, optionally with a dipping sauce of your choice.
