Total: 25m
Ingredients
vegetables
4 cups
any combination of bell peppers, broccoli, carrots, etc.
oil
3 tablespoons
protein
1 pounds
chicken, beef, or tofu
soy sauce
1 /4 cup
rice or noodles
2 cups
for serving, cooked
Instructions
1

Start by gathering all the ingredients you have in your fridge. Chop the vegetables into bite-sized pieces and set them aside.

2

If you have any protein, such as chicken, beef, or tofu, cut it into small cubes. Heat 2 tablespoons of oil in a large skillet or wok over medium-high heat.

3

Add the protein to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove the protein from the skillet and set it aside.

4

In the same skillet, add another tablespoon of oil if needed, and toss in the chopped vegetables. Stir-fry the vegetables for about 3-5 minutes until they are tender but still crisp.

5

Return the cooked protein to the skillet with the vegetables. Pour in 1/4 cup of soy sauce and stir everything together to combine.

6

Cook for an additional 2-3 minutes to heat through and allow the flavors to meld. Serve the stir-fry hot over cooked rice or noodles, if desired.
