Crockpot Spicy Chipotle-Lime Chicken with Avocado Salsa

Begin by placing 2 pounds of boneless, skinless chicken thighs in the bottom of your crockpot. In a mixing bowl, combine 1/4 cup of lime juice, 2 tablespoons of chipotle peppers in adobo sauce (finely chopped), 1 tablespoon of honey, and 1 teaspoon of cumin.
Whisk the mixture until well blended. Pour the chipotle-lime mixture over the chicken thighs, ensuring they are well coated.
Add 1 cup of diced bell peppers (any color) and 1 cup of diced red onion on top of the chicken. Season with 1 teaspoon of salt and 1/2 teaspoon of black pepper.
Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shredded.
