Begin by seasoning the chicken thighs with salt, pepper, and dried oregano in a large bowl. Heat 2 tablespoons of olive oil in a skillet over medium heat.
Sear the seasoned chicken thighs for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, add 1 head of garlic, cut in half horizontally, and roast for about 5 minutes until fragrant.
In the crock pot, place the seared chicken thighs at the bottom. Squeeze the roasted garlic cloves from their skins over the chicken.
