Crock Pot Comfort Chicken with Savory Mushroom and Thyme Infusion

Begin by seasoning the chicken thighs with salt and pepper on both sides. Heat a skillet over medium-high heat and add 2 tablespoons of olive oil.
Once the oil is hot, sear the chicken thighs for about 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
In the same skillet, add 1 cup of sliced mushrooms and sauté for 5 minutes until they are browned and tender.
Add 2 cloves of minced garlic and cook for an additional minute until fragrant. Pour in 1/2 cup of white wine, scraping the bottom of the skillet to deglaze, and let it simmer for 2 minutes.
In a crock pot, combine the sautéed mushrooms and garlic with 1 cup of chicken broth, 1 tablespoon of fresh thyme leaves, and 1 tablespoon of Dijon mustard.
