Crispy Cheesy Chicken Roll-Ups with Rainbow Veggie Dipping Sauce

Begin by preheating your oven to 400°F (200°C). Next, take 2 boneless, skinless chicken breasts and place them between two sheets of plastic wrap.
Use a meat mallet to gently pound the chicken to an even thickness of about 1/2 inch. In a small bowl, mix together 1 cup of shredded mozzarella cheese, 1/2 cup of finely chopped spinach, and 1/4 teaspoon of garlic powder.
Spread the cheese mixture evenly over each chicken breast. Carefully roll each chicken breast tightly from one end to the other, securing the filling inside.
Use toothpicks to hold the rolls together if necessary. In a shallow dish, combine 1 cup of breadcrumbs with 1/2 teaspoon of Italian seasoning and a pinch of salt.
