Crispy Buffalo Cauliflower Bites with Blue Cheese Drizzle and Celery Slaw

Preheat your oven to 450°F (232°C) and line a baking sheet with parchment paper. Cut one head of cauliflower into bite-sized florets and set aside.
In a large bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and 1/2 teaspoon of salt.
Gradually add 1 cup of cold water to the flour mixture, stirring until smooth. Dip each cauliflower floret into the batter, allowing excess to drip off, and place them on the prepared baking sheet.
Bake the cauliflower for 20 minutes, flipping halfway through, until golden and crispy. While the cauliflower is baking, prepare the buffalo sauce by melting 1/2 cup of unsalted butter in a saucepan over medium heat.
Once melted, stir in 1/2 cup of hot sauce and 1 tablespoon of apple cider vinegar, mixing well. After the cauliflower is done baking, toss the crispy bites in the buffalo sauce until evenly coated.
Return the coated cauliflower to the baking sheet and bake for an additional 10 minutes. For the blue cheese drizzle, combine 1/2 cup of crumbled blue cheese, 1/4 cup of sour cream, 2 tablespoons of mayonnaise, and 1 tablespoon of lemon juice in a small bowl.
Mix until smooth and creamy. To make the celery slaw, thinly slice 2 stalks of celery and toss them with 1 tablespoon of olive oil, 1 tablespoon of apple cider vinegar, and a pinch of salt.
Serve the crispy buffalo cauliflower bites hot, drizzled with blue cheese sauce and topped with celery slaw for a refreshing crunch.
