Crispy Air Fryer Avocado Egg Rolls with Spicy Mango Salsa

Start by preparing the spicy mango salsa. In a medium bowl, combine 1 ripe mango (diced), 1/4 cup red onion (finely chopped), 1 jalapeño (seeded and minced), the juice of 1 lime, and a pinch of salt. Mix well and set aside to let the flavors meld.
Next, prepare the avocado filling. In a large bowl, mash 2 ripe avocados with a fork until smooth.
Add 1 teaspoon garlic powder, 1 teaspoon cumin, 1/2 teaspoon smoked paprika, and salt to taste to the mashed avocados. Mix until well combined.
Lay out 6 egg roll wrappers on a clean surface. Place about 2 tablespoons of the avocado mixture in the center of each wrapper.
Moisten the edges of the wrappers with water, then fold the bottom up over the filling, fold the sides in, and roll tightly to seal.
Preheat your air fryer to 375°F (190°C) for about 5 minutes.
Lightly spray the air fryer basket with cooking spray. Place the egg rolls in the basket in a single layer, making sure they are not touching.
