Creamy Tuna and Pea Pasta
A comforting and creamy pasta dish featuring canned tuna, frozen peas, and a rich sauce made with coconut milk and cheddar cheese.
Bring a large pot of salted water to a boil.
Add 8 ounces of pasta to the boiling water and cook according to package instructions until al dente.
Drain the pasta and set aside.
In a large skillet, heat 1 tablespoon of olive oil over medium heat.
Add 1 cup of frozen peas to the skillet and sauté for 3-4 minutes until heated through.
Add 1 can of drained tuna to the skillet and stir to combine with the peas.
Pour 1 cup of coconut milk into the skillet and bring to a simmer.
Stir in 1 cup of shredded cheddar cheese until melted and the sauce is creamy.
Season the sauce with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.
Add the cooked pasta to the skillet and toss to coat with the sauce.
Cook for an additional 2-3 minutes until the pasta is heated through.
Serve the pasta hot, garnished with additional cheese if desired.
