Creamy Pasta with Mixed Vegetables
A delicious and creamy pasta dish made with available ingredients from the fridge, including pasta, milk, and a variety of vegetables.
Bring a large pot of salted water to a boil.
Add 2 cups of pasta to the boiling water and cook according to package instructions until al dente.
Drain the pasta and set aside.
In a large skillet, heat 2 tablespoons of olive oil over medium heat.
Add 1 cup of mixed vegetables to the skillet and sauté for 5 minutes until tender.
Add 1 cup of milk to the skillet and bring to a simmer.
Stir in 1/2 cup of grated cheese and mix until melted and smooth.
Add the cooked pasta to the skillet and toss to combine.
Season with salt and pepper to taste.
Serve hot, garnished with fresh herbs if desired.
