Creamy Alfredo Vegetable Pasta
A healthy and delicious pasta dish made with creamy Alfredo sauce and fresh vegetables.
Bring a large pot of water to a boil and add a pinch of salt.
Add 2 cups of pasta to the boiling water and cook according to package instructions until al dente.
While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat.
Add 1 cup of sliced zucchini and 1 cup of cherry tomatoes to the skillet.
Sauté the vegetables for about 5 minutes until they are tender.
Add 1 cup of Alfredo sauce to the skillet and stir to combine with the vegetables.
Drain the cooked pasta and add it to the skillet with the sauce and vegetables.
Toss everything together until the pasta is well coated with the sauce.
Season with salt and pepper to taste.
Serve the pasta hot, garnished with grated Parmesan cheese if desired.
