Classic Fried Pies
Classic fried pies are a delightful treat filled with sweet or savory fillings, encased in a flaky, golden-brown crust. These hand-held pastries are perfect for dessert or a snack, and can be customized with various fillings such as fruit, chocolate, or even meat.
Begin by preparing the dough. In a large mixing bowl, combine 2 cups of all-purpose flour, 1/2 teaspoon of salt, and 1 tablespoon of sugar.
Cut in 1/2 cup of unsalted butter until the mixture resembles coarse crumbs. Gradually add 1/4 cup of cold water, mixing until the dough comes together.
Divide the dough into 8 equal portions and shape them into discs. Wrap the discs in plastic wrap and refrigerate for at least 30 minutes.
While the dough chills, prepare your filling. In a separate bowl, mix together 1 cup of fruit filling or 1 cup of chocolate chips, depending on your preference.
Remove the dough from the refrigerator and roll out each disc on a floured surface to about 1/8 inch thick.
Place a tablespoon of filling in the center of each rolled-out dough. Fold the dough over the filling to create a half-moon shape and press the edges to seal.
Heat 2 inches of vegetable oil in a deep skillet over medium heat. Once the oil is hot, carefully add the pies to the skillet, a few at a time, to avoid overcrowding.
Fry the pies for about 3-4 minutes on each side or until they are golden brown. Remove the fried pies from the oil and drain them on paper towels.
