Cinnamon-Infused Quinoa Chocolate Bark with Almonds and Dried Cherries

Begin by preheating your oven to 350°F (175°C). Spread 1 cup of cooked quinoa on a baking sheet lined with parchment paper and toast it in the oven for 10 minutes until slightly crispy.
In a microwave-safe bowl, combine 8 ounces of dark chocolate (at least 70% cocoa) and melt it in 30-second intervals, stirring in between until smooth.
Once melted, stir in 1 teaspoon of ground cinnamon and mix well. Remove the toasted quinoa from the oven and let it cool for a few minutes.
