Cheesy Veggie Quesadillas
These cheesy veggie quesadillas are a fun and delicious snack that kids will love. Packed with colorful vegetables and gooey cheese, they are easy to make and perfect for dipping!
Start by gathering all your ingredients on a clean countertop. Heat a non-stick skillet over medium heat.
Place a tortilla in the skillet and sprinkle half of it with shredded cheese. Add a layer of chopped bell peppers and spinach on top of the cheese.
Fold the tortilla in half to cover the filling. Cook the quesadilla for about 3-4 minutes until the bottom is golden brown.
Carefully flip the quesadilla using a spatula and cook the other side for another 3-4 minutes. Once both sides are crispy and the cheese is melted, remove the quesadilla from the skillet.
Let it cool for a minute before cutting it into wedges. Serve the quesadilla with salsa or guacamole for dipping.
