Cheesy Veggie Quesadillas
A quick and delicious lunch option using fresh vegetables and cheese, perfect for a satisfying meal.
Preheat a non-stick skillet over medium heat.
Slice the bell pepper and zucchini into thin strips.
Grate the cheddar cheese.
Place a tortilla on the skillet and sprinkle half of the cheese on one half of the tortilla.
Add the sliced bell pepper, zucchini, and a handful of spinach on top of the cheese.
Sprinkle the remaining cheese over the vegetables.
Fold the tortilla in half to cover the filling.
Cook for 3-4 minutes on each side until the cheese is melted and the tortilla is golden brown.
Remove from the skillet and let it cool slightly before cutting into wedges.
Serve with a dollop of sour cream and salsa on the side.
