Cheesy Potato and Green Bean Casserole
A comforting and creamy casserole made with potatoes, green beans, and a cheesy sauce, perfect for a cozy meal.
Preheat your oven to 375°F (190°C). Wash and peel the potatoes, then slice them thinly. Trim the ends of the green beans and cut them into bite-sized pieces.
In a large pot, bring water to a boil and add the potato slices. Cook for 5 minutes, then add the green beans and cook for another 3 minutes.
Drain the potatoes and green beans and set aside. In a saucepan, melt the butter over medium heat. Add the flour and whisk continuously for 1 minute to form a roux.
Gradually add the milk, whisking constantly until the sauce thickens. Stir in the shredded cheese until melted and smooth.
Season the cheese sauce with salt and pepper to taste. In a baking dish, layer half of the potatoes and green beans.
Pour half of the cheese sauce over the vegetables. Repeat with the remaining potatoes, green beans, and cheese sauce.
Sprinkle the top with additional shredded cheese if desired. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
Let the casserole cool for a few minutes before serving.
