Bibimbap (Korean Mixed Rice)

Bibimbap is a vibrant and flavorful Korean dish that combines rice with a variety of sautéed vegetables, marinated meat, a fried egg, and gochujang (Korean chili paste). It's not only delicious but also visually stunning, making it a perfect dish to impress your wife!
1. Prepare the rice: Rinse 1 cup of short-grain rice under cold water until the water runs clear. Cook the rice according to package instructions or in a rice cooker.
2. Prepare the vegetables:
- Julienne 1 carrot and 1 zucchini.
- Slice 1 cup of shiitake mushrooms.
- Blanch 1 cup of spinach in boiling water for 1 minute, then drain and squeeze out excess water.
- Season each vegetable separately with a pinch of salt and sauté in a pan with a little sesame oil until tender (about 2-3 minutes each).
3. Prepare the meat:
- Marinate 200g of thinly sliced beef (or tofu for a vegetarian option) in a mixture of 2 tablespoons soy sauce, 1 tablespoon sesame oil, 1 tablespoon sugar, and minced garlic for 30 minutes.
- Sauté the marinated beef in a pan over medium heat until cooked through (about 5-7 minutes).
4. Fry the egg: In a separate pan, fry 2 eggs sunny-side up.
5. Assemble the bibimbap: In a large bowl, place a serving of cooked rice at the bottom. Arrange the sautéed vegetables and beef (or tofu) on top of the rice in sections.
6. Top with a fried egg and a dollop of gochujang.
7. Serve with sesame seeds and sliced green onions for garnish. Mix everything together before eating!
