Beef, Bell Pepper, and Tomato Nachos with Mexican Cheese
These delicious nachos are loaded with seasoned beef, fresh bell peppers, juicy tomatoes, and a generous amount of melted Mexican cheese, making them a perfect appetizer or snack for any gathering.
Preheat your oven to 350°F. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 pound of ground beef to the skillet and cook until browned, about 5-7 minutes.
Drain any excess fat from the skillet. Stir in 1 teaspoon of chili powder, 1 teaspoon of cumin, and salt to taste.
Add 1 medium bell pepper, diced, and 1 medium tomato, diced, to the skillet and cook for an additional 3-4 minutes until the vegetables are tender.
On a large baking sheet, spread out 8 ounces of tortilla chips in an even layer. Spoon the beef and vegetable mixture evenly over the chips.
Sprinkle 2 cups of shredded Mexican cheese blend over the top of the nachos. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for a few minutes before serving. Garnish with fresh cilantro and jalapeños if desired.
