Beef and Vegetable Udon Stir-Fry
A hearty and flavorful udon stir-fry featuring leftover ground beef, fresh vegetables like carrot, broccoli, and kale, all tossed in a savory sauce.
Begin by preparing the vegetables. Chop the carrot into thin matchsticks, cut the broccoli into small florets, and roughly chop the kale.
Heat a large skillet or wok over medium-high heat. Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula.
Once the beef is cooked, add the chopped carrot and broccoli to the skillet and stir-fry for about 3 minutes.
Next, add the chopped kale and continue to stir-fry for an additional 2 minutes until the kale is wilted.
While the vegetables are cooking, prepare the udon noodles according to the package instructions. Drain the noodles and set them aside.
Once the vegetables are tender, add the cooked udon noodles to the skillet along with soy sauce, sesame oil, and a pinch of salt.
Toss everything together until well combined and heated through. Serve the udon stir-fry hot, garnished with sesame seeds if desired.
