Beef and Blue Cheese Stuffed Sweet Potatoes with Balsamic Glaze
This unique recipe features tender beef mixed with creamy blue cheese, all stuffed into sweet potatoes and drizzled with a tangy balsamic glaze, making it a perfect quick and easy dinner for busy weeknights.

Preheat your oven to 400°F. Wash the sweet potatoes thoroughly and pierce them several times with a fork.
Place them on a baking sheet and bake for 45-50 minutes, or until tender. While the sweet potatoes are baking, heat a skillet over medium heat and add 1 tablespoon of olive oil.
Once hot, add 1 pound of ground beef and cook until browned, breaking it apart with a spatula. Season the beef with 1 teaspoon of garlic powder, 1 teaspoon of onion powder, and salt and pepper to taste.
Stir in 1/2 cup of crumbled blue cheese until melted and combined. Once the sweet potatoes are done, remove them from the oven and let them cool slightly.
Cut each sweet potato in half lengthwise and scoop out a small portion of the flesh to create a pocket.
Fill each sweet potato half with the beef and blue cheese mixture. Drizzle with 2 tablespoons of balsamic glaze and sprinkle with chopped fresh parsley for garnish.
