Autumn Harvest Chicken with Spiced Apple-Cranberry Chutney

Begin by preheating your oven to 400°F. Next, season 4 chicken thighs with salt, pepper, and 1 teaspoon of smoked paprika.
Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the chicken thighs skin-side down and sear for 5-7 minutes until golden brown.
Flip the chicken and cook for an additional 3 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add 1 diced onion and sauté for 3-4 minutes until translucent. Stir in 2 cloves of minced garlic and cook for another minute.
Add 2 cups of diced apples, 1 cup of fresh cranberries, 1/4 cup of brown sugar, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of ground ginger to the skillet.
Mix well and let it cook for 5 minutes until the apples soften. Return the chicken thighs to the skillet, skin-side up, and transfer the skillet to the preheated oven.
Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F. Once done, remove from the oven and let it rest for 5 minutes before serving.
