Banana Pancake Bread Pudding
A delightful fusion of banana bread and pancakes, transformed into a comforting bread pudding with a hint of cinnamon and a drizzle of maple syrup.
Preheat your oven to 350°F (175°C). Grease a baking dish with butter. Cut the banana bread into 1-inch cubes and place them in the baking dish.
In a mixing bowl, whisk together the eggs, milk, and cinnamon until well combined. Pour the egg mixture over the banana bread cubes, ensuring they are fully soaked.
Let the mixture sit for 10 minutes to absorb. Slice the bananas and layer them on top of the soaked bread cubes.
Drizzle maple syrup over the top. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the pudding is set.
Remove from the oven and let it cool slightly before serving. Serve warm with additional maple syrup if desired.
